In our February 2026 cooking demonstrations, our nutritionist, Jasmine Daviston, explored how simple, flavorful meals can support steady energy and healthier blood sugar levels for both adults and kids.

Baked fish, Dark Green Slaw & Honey Cornbread Pancakes + Peach Cobbler Cups

Guests enjoyed a comforting and flavorful cooking demonstration featuring Baked Catfish served with a Dark Green Slaw and Honey-Cornbread Pancakes. For dessert, they finished with Peach Cobbler Cups topped with a wholesome oat crumble. This demo highlights satisfying meals made with nourishing ingredients. This demonstration also helped participants understand not just what to eat, but why certain foods help the body work better especially for those at risk for insulin resistance or type 2 diabetes.

Baked fish

مكونات:
• 1½ lbs fish fillets
• 2 tbsp olive oil
• 1 tsp garlic powder
• 1 tsp paprika
• ½ tsp black pepper
• ½ tsp salt
• Lemon wedges

Instructions:
1. Preheat oven to 400°F
2. Place catfish on lined sheet pan
3. Brush with olive oil and season
4. Bake 18–20 minutes until flaky
5. Serve with lemon

Dark Green Slaw

مكونات:
• 4 cups shredded kale or collard greens
• 5 cup shredded cabbage (3 green and 2 red)
• 2 tbsp olive oil
• 1 tbsp apple cider vinegar
• 1 tbsp honey/maple or sugar free sub
• Salt & pepper
• 1 shredded apple (sweet variety)
• ½ cup carrot
• ¼ cup Dijon or whole grain mustard

Instructions:

1. Massage greens with olive oil, let set and soften 10-15 min
2. Mix Oil, apple cider,  vinegar,  honey,  salt and pepper and  mustard.
3. Toss the remaining ingredients with the dressing
4. Chill for 10 to 15 minutes in refrigerator

Honey Cornbread Pancakes

مكونات:
• 1 cup cornmeal
• ½ cup whole wheat or all-purpose flour
• 1 tbsp honey
• 1 tsp baking powder
• 1 egg
• ¾ cup milk
• ½ cup of full fat Greek yogurt or sour cream
• 1/3 cup melted coconut oil or butter

Instructions:
1. Mix dry ingredients
2. Whisk wet ingredients
3. Combine and cook pancakes on lightly greased skillet Medium heat

Peach Cobbler Cups with Oat Topping

مكونات:
• 2 cups sliced peaches (fresh or frozen)
• 3 tbsp honey
• ½ cup oats
• 1 tbsp butter or coconut oil
• Cinnamon
• ½ lemon juice

Instructions:
1. Toss peaches with 2 tbsp honey and cinnamon
2. Mix oats with butter and rest of honey
3. Bake in cups at 375°F for 20 minutes


Taco Pizzas & Strawberry Agua Fresca

Kids got hands-on in the kitchen making fun and flavorful Taco Pizzas and refreshing Strawberry Agua Fresca which is a fruit-based drink to help hydrate without excess sugar.. This interactive class encouraged creativity while introducing simple cooking skills and fresh ingredients kids will love.

Taco Pizzas

مكونات:
• Whole wheat tortillas or English muffins
• ground turkey/canned beans or both
• Taco seasoning (mild) 3 packs
• Shredded cheese
• Optional toppings: lettuce, tomato
• 2 tbsp olive oil
• Favorite seasoning

Instructions:
1. Preheat oven to 375°F
2. Add 1 tbsp of oil and cook turkey add 1 ½ taco packet
3. Open and drain beans, cook in fresh water add rest of taco packets. Simmer until soft then blend of smooth spreadable consistency
4. Place tortillas/English muffins on baking sheet. Sprinkle favorite seasoning
5. Spread beams, then meet then cheese
6. Bake for 10 to 15 minutes
7. Add toppings after baking

Strawberry Agua Fresca

مكونات:
• 2 cups strawberries
• 3 cups cold water
• 3 tbsp honey
• Lime juice (1/2)

Instructions:
1. Blend strawberries with water
2. Strain if desired
3. Sweeten lightly and serve cold
